Choc-Chip Museli Slice

Mmmmmm just took this out of the oven and its delicious, and really easy and quick to make. It took me about 12 mins to put together, i know because i threw some pasta in to boil for dinner while i prepped this one up.

Choc-Chip Muesli Slice

Ingredients

  • 2 1/2 cups rolled oats
  • 3/4 cup desiccated coconut
  • 1 cup milk choc bits
  • 2/3 cup firmly-packed brown sugar
  • 2/3 cup plain flour
  • 1/2 teaspoon baking powder
  • 1/2 cup light olive oil
  • 1/3 cup milk
  • 1 egg
  1. Preheat oven to 180°C. Grease a 3cm-deep, 18cm x 28cm (base) slab pan& line with baking paper.
  2. Mix oats, coconut, choc bits and sugar in a large bowl. Sift flour and baking powder together over the oat mixture.
  3. Whisk oil, milk and egg together in a jug. Add to oat mixture. Stir until well combined. Spoon mixture into prepared pan. Using the back of a spoon, press mixture into pan. Bake for 20 minutes or until light golden and set.
  4. Stand slice in pan for 15 minutes. Lift onto a wire rack. Allow to cool. Cut into pieces & eat

I actually omitted 1/2 cup of the oats and threw in 1/4 cup of chopped dates and 1/4 cup of slivered almonds in there to bulk it out and give more flavour. After the 20 mins of baking, cooling and slicing i still felt that it was too soft in the center pieces so i put the lot back into the oven for another 15mins. The tops got more crispy and the slices are much firmer without being dry.

I think next time i will increase the temperature to 200 degrees. But there definitely will be a next time for this recipe!
